Our kids started school on Thursday, which was basically just a practice round. So now this will be a full week of busy between school, therapy, work, and karate. Plus I am heading to Indiana on Friday to celebrate my nephew’s first birthday!
So dinner this week, we are trying to keep it as simple as possible. Here is the menu we have planned this week.
- Sunday: BBQ Grilled Chicken with green beans and mashed sweet potatoes as a side.
- Monday: Chicken Asian Rice Bowls. I will be using rotisserie chicken and microwave rice to make this as quick as possible before karate. The sauce for chicken and slaw on top comes from this recipe here.
- Tuesday: Taco Tuesday! My son is super into tacos lately, so we’ve been making classic ground beef tacos every week.
- Wednesday: Breakfast Casserole. I normally make this breakfast casserole with biscuits, but we are trying it this week english muffins instead. Same recipe, just substituting the bread.
- Thursday: Orange Chicken and Fried Rice. Both of these items are from the freezer section at Trader Joe’s! I will also being making a side of broccoli to get some more veggies in.
- Friday: Pizza night. Not sure what pizza the boys will be eating, but I will be eating my favorite pizza from my hometown, Turonis! My favorite it pepperoni with green peppers.
- Saturday: Takeout or leftover pizza.
I hope this inspires you to keep it simple in the kitchen. Cooking doesn’t have to be hard with all of these elaborate recipes. You can take shortcuts and still have a fabulous meal! Hope you have a great week and thanks for reading!!
