On the Dinner Menu 10/1 to 10/7

This last month has been a blur and we defintely ate out more than we like. I just feel better when eating at home, even when it’s comfort food and not super healthy. But our air conditioner went out, we went to Disney twice, one kid had to swtich teachers and the other started at a new school. And without AC in Florida for a few days until it was fixed, cooking in the hot house didn’t seem worth it. Now everything is fixed so we are back to cooking and baking like we perfer!

Here is what we have planned this week:

  • Sunday: Chili. My husband is actually making this one, but here is the recipe he is loosely following. I am making this beer bread to go with it. Do you like noodles in your chili or not?? We do 🙂
  • Monday: BLT sliders on hawaiian rolls. We did this a few weeks ago and the rolls were a game changer!! Also the secret sauce is to add a bit of oil and vinegar to your tomatoes and let them sit while you cook the bacon… uhh-mazing.
  • Tuesday: Taco Tuesday! Just your regular soft shell tacos with ground beef.
  • Wednesday: Coconut Shrimp with rice and mango salsa. So good!
  • Thursday: Orange Chicken with fried rice and eddmame. This is an easy staple in our house that we make often because it’s easy to buy frozen and keep in the freezer for the nights we don’t want to cook. Which is usually by Thursday haha
  • Friday: Pizza night. Up in the air right now, but we may make homemade pizzas! I love the pizza dough from Publix’s bakery. Or this easy recipe using greek yogurt!
  • Saturday: Takeout. Probably sushi because that has been my favorite lately. Specifically from Komoon in Bonita – delish!

Nothing crazy this week, per usual, but I hope this inspires you to plan ahead! Meal planning helps take the guess work out after a long day at work. Hope you have a great week 🙂

Bonus

We love to bake in this house and are always trying new recipes. Here are a few we tried in September:

  • Starbucks Copycat Cake Pops – these are delish, but a pain to make. Now I understand the pricing haha
  • Blueberry Butter Swim Biscuits – I think if had done only 1 cup of blueberries and cooked at a lower temperature for longer, it would have turned out better. But if you love blueberries and biscuits, it was a good little breakfast with coffee on a Sunday morning!
  • Pumpkin Oat Chocolate Chip Cookies – These were delicious! It makes a TON though and mine turned out a bit cake-like rather than cookies. If you like pumpkin and oats though, definitely recommend! My family does not… so I was the only one eating them 🙂
