Sausage Biscuit Breakfast Casserole

Today I made a crowd pleaser, my Sausage Biscuit Breakfast Casserole.

I found a similar breakfast casserole on Pinterest years ago and have perfected in to my own. This is the perfect breakfast casserole to feed a crowd at the holidays or even to feed the family on a random Wednesday night.

We even had a brunch themed 1st birthday for my youngest son and didn’t make enough of this sausage biscuit casserole. I had made 2 casseroles and they were the first ones gone. I should have made 3! 

This breakfast casserole is easy to make, only 5 ingredients, and feeds 6-8 people. 

Here are the 5 ingredients you will need:

  • 1 can of buttermilk biscuits
  • 1 roll of breakfast sausage 
  • 2 cups of cheddar cheese 
  • 6 eggs
  • 1/4 cup milk

First, preheat the oven to 350 degrees.

Next, brown the sausage until fully cooked. I use Jimmy Dean’s regular sausage, but you could totally use a spicy sausage if everyone likes it hot!

While the sausage is cooking, spray the 9×13 casserole dish with a cooking spray to prepare it. Then cut or tear the biscuits into small chunks. About 6-8 pieces for each biscuit and place in the bottom of the casserole dish.

Once the sausage is fully cooked, drain it, and spread it evenly over the biscuits. The smell of the sausage will draw the family in and they will start asking when breakfast will be ready. So be prepared! 

Next, top the biscuits and sausage with 2 cups of cheddar cheese. I use one full bag and don’t actually measure it out to save time and not dirty another dish. 

And finally, it is time to top this casserole with 6 whisked eggs and 1/4 cup milk. Pour the egg and milk mixture evenly on top the the casserole and bake for 30-35 minutes at 350 degrees.

When you take the casserole dish out of the oven, jiggle it a little to make sure the eggs are completely cooked. 

Then slice and enjoy! I like to sprinkle salt and pepper on top, my husband likes to add hot sauce, and my dad likes to top his with salsa. So many different options to make it your own.

This is also a great recipe to make ahead of time and reheat. Or double the recipe if you have more than 8 adults because everyone will want seconds!
