The work week can get busy with everyone’s schedules. So planning out our dinners ahead of time are necessary. I love to share them with you guys because I know as a busy, working mom I am always looking for new and quick recipes. And quick and easy is all I know how to cook!!
Here is our dinner menu this week. I have linked the recipes we will be using (if available) and included any notes if necessary.
- Sunday: Brats and hamburgers on the grill with homemade french fries. I usually thinnly slice the potatoes, toss in olive oil, salt and then bake at 425 degrees for about 30 minutes (mixing after 15 minutes).
- Monday: Ham sliders – I don’t really follow a recipe, but here is one I found on Pinterest
- Tuesday: Steak Burrito Rice Bowls – yes please!!
- Wednesday: Breakfast Casserole – this is a classic in our house and typically eaten at dinnertime not actually for breakfast. It’s easy to make for a crowd!
- Thursday: Spaghetti – I usually make zoodles or spaghetti squash on the side for myself instead of the pasta. I always use this marinara sauce and will most likely throw in some meatballs. I like to keep these Gardein plant-based meatballs in the freezer. They are great to throw in the sauce or even put on a bun for a “meatball” sub.
- Friday: Homemade pizza using this quick and easy 2-ingredient pizza dough for the crust. Then for toppings we usually make a cheese for the kids and a pepperoni, sausage, and green pepper for us!
- Saturday: Takeout – basically because I hate cooking on Saturdays 🙂
