On the Dinner Menu 9/10 to 9/16

September has been a busy month. We went to Disney World Labor Day weekend and then both of my boys had to switch rooms and get new teachers at school. But being prepared at home and not having to think about dinner really helps.

So cheers to keeping it simple this week with these recipes:

  • Sunday: Enchiladas. Here is the recipe I used and we topped with cilantro and shredded lettuce. I found it on Pinterest and it was soooo yummy!
  • Monday: BLTs (bacon, lettuce and tomato). Keeping it super easy tonight before karate. We have leftover pancakes from the weekend for the boys and we are making sandwiches with the bacon.
  • Tuesday: We are going to our favorite bar for dinner to celebrate my husband’s 35th birthday!
  • Wednesday: Coconut Shrimp. Found this shrimp in the frozen section at Trader Joe’s. Planning to pair it with rice and green beans.
  • Thursday: Orange Chicken. Same thing as last night – found this at Trader Joe’s; pairing the chicken with fried rice and eddmame.
  • Friday: Pizza night
  • Saturday: Lemon Pesto Pasta. The lemon pesto is from Trader Joe’s and I plan on using this pasta with it.

Keeping it simple is the best way to meal plan. So I hope this inspires you! Cooking doesn’t have to be hard with all of these elaborate recipes. Take as many shortcuts as possible to still have a great meal! Hope you have a great week 🙂
