Week of 11/13 to 11/19
I feel like we are like a broken record and make the same dinners every week. I guess we like what we like. However I am bored with our usual dinner lineup, so I have been on the hunt for some new quick and easy dinner recipes.
Of course I go to Pinterest to start my search. I have a whole board dedicated to recipes I’d like to try. Check out my Pinterest board here titled Cooking with Love. I also have fun food boards for Breakfast and Sweet Treats.
Every Sunday I like to plan out our dinners for the week for two reasons:
- So I don’t have to think throughout the week. As a busy, working mom of two little boys, I liked to prep as much as I can over the weekends to be prepared for the week.
- So I can make a list and head to the grocery store. Without a plan, we will only buy junk, order out every night, or eat popcorn for dinner. So planning ahead is a must for our family!
I found a few new recipes we are going to try this week and thought I would share. Here is our dinner menu for the week. I have linked the recipes we will be using and included any notes if necessary.
- Sunday – BBQ Chicken with Cornbread Waffles. This recipe uses pork, but we are using chicken and I used this classic coleslaw recipe here.
- Monday – Turkey Cranberry Sliders with a side of roasted brussel sprouts. This just sounds like Thanksgiving and I am here for it. We are planning to use deli turkey, but this would be a great recipe with Thanksgiving leftovers.
- Tuesday – Coconut Shrimp Rice Bowls with Mango Salsa. This is the shrimp we use and here is the mango salsa recipe we use. And we just place this on top of jasmine rice.
- Wednesday – We are going to our favorite hibachi restaurant in Naples to celebrate my mom’s birthday. I will be baking her favorite cake, Angel Food Cake.
- Thursday – Taco Potato Skillet w/ Taco Dip. I will be using ground turkey instead of beef.
- Friday – Pesto Spaghetti Squash with a side of laundry and packing.
- Saturday – Nothing planned because we are leaving for Orlando and heading to Universal Studios for the day. I do know that Butterbeer will be on the menu!
